With more than two decades of experience of behind him, Nicolas has been immersed in cooking since his childhood in the south of France. In 1999, he embarked on a professional career driven by passion.
One of the Disciples of Escoffier, a vast global network of ambassadors of Auguste Escoffier’s culinary heritage, Nicolas shares the values of respect for cuisine and handing down culinary culture.
A member of the association Euro-Toques, Nicolas sees himself as part of the European culinary tradition and defends professional expertise, as well as high-quality, flavoursome ingredients for healthy eating.
Building on his experience as a chef on board superyachts for several years, which required him to develop a creative, anti-waste approach to his work, Nicolas takes part in cooking competitions.
The chef from the Var won the 2022 Superyacht Chef Competition held by the Yacht Club de Monaco. The following year, in March 2023, he was named as a member of the jury for the fourth edition of this competition, alongside Yannick Alléno, president of the expert jury and twice winner of three stars in the Michelin Guide.
